Tangerine-cardamom-vanilla
smooth chocolate center with bits of chewy fruit dipped in 86% dark chocolate: tangy & piquant, a customer favorite!

Liliko'i-ginger
Slivers of young ginger candied in coconut sugar and liliko'i juice in a smooth chocolate center hand-dipped in 86% dark chocolate: fresh and fruity.

Halema'uma'u
Silky chocolate center with Ceylon cinnamon and Hawaiian chili pepper, a local version of a classic combination. The luscious chocolate M. Pele might serve to her guests.

Melty honu
A dark chocolate with macadamia nuts ground in to create a smooth, luscious melt.

Surinam cherry-vanilla
A rich and fruity chocolate center with candied Surinam cherry bits, had-dipped in 85% chocolate.

Kuleana
A subtle rum flavor plays wonderfully with the smooth, silky chocolate center, dipped in 86% dark chocolate.

Coffee bean & nib with cardamom
I first made these to end a friends’ Ethiopian feast, since coffee and cardamom are a beloved combination in that part of the world. Cacao nibs and freshly ground coffee beans (Ka’ū roasted by Big Island Coffee Roasters) provide two different types of crunch in the bottom layer. The upper layer features smooth Ahualoa macadamia nut and fresh ground cardamom.

Lemon drop mangosteen & basil
Our tiny tree was heavy with gorgeous golden lemon drop mangosteen fruits, so if course I wanted to use them in my chocolates. The flavor pairs wonderfully with chocolate and a subtle hint of fresh sweet basil, sourced from the Hakalau FoodShare Market.

Pōhaku
Macadamia nut cookie with local vanilla and Kona deep sea salt, hand-dipped in 86% dark chocolate: a simple combination with deliciousness exceeding the sum of its parts.
